The nvidia Jetson TX2 GPU card is coming out soon, or may already be available. I would like to use that for video encoding to transport camera and hdmi information across a network. It is possible to connect up to three camera heads to the board. Leopard Imaging has a TX1/TX2 Camera kit to do so.
